Green curry chicken (with pumpkin, cauliflower & broccoli)


Day 3 breakfast - Mmmmmm....green curry chicken with vegetables and a huge salad for breakfast! Last night i felt absolutely exhausted and went to bed early again...maybe my body is telling me something.

Day 2

So i'm feeling pretty good, but a little tired at night time, i slept 9hrs last night which was just amazing, without waking up at all. For lunch i had some roast chicken and a huge salad, afternoon snack was a handful of fresh blueberries, and dinner was another big salad and sausages. i realised too late that the sausages probably had 'filler' in them and it would have been grains. Oh well. I'm still learning so I'm not freaking out or anything.

I also made up some green curry chicken to have tomorrow (chicken thighs, coconut milk, Mae Ploy green curry paste, onion, pumpkin, cauliflower, broccoli, red & green capsicum).

Grilled salmon steak


Day 2 for breakfast i had grilled salmon with fresh lemon squeezed over it, and stirfried vegetables with walnuts. Had a very good sleep last night: 9 hours! Am feeling pretty good, and the best part is, i'm not really hungry.

BBQ fillet steak


Tonight i had a BBQ fillet steak, sauteed mushrooms and garlic, baby spinach leaves and cauliflower mash (which tastes much like mashed potato!). Heading for bed early, it's been a long day.

Hamburgers and garden salad


Day 1 -lunch and afternoon snack: Had a mixed salad (baby spinach, lettuce, tomatoes, red onion, celery, mushrooms) with a few pecans on top and an olive oil/balsamic vinegar dressing. With that i made a couple of hamburger patties. It was too much to eat for lunch so i will bring the leftovers to work for my regular hunger fix around 3pm.

NOTE: I am keeping my first week fairly simple in terms of meal planning. Next week I might venture into a few recipes - but i'm not really a 'recipe follower' at the best of times.....

Chicken and veggie stirfry


Today is Day One! After my morning crossfit workout, i made a chicken and veggie stirfry (chicken thigh marinated in fresh lime juice and olive oil, carrots, celery, zucchini, red capsicum, onion, mushroom) with a tiny amount of slivered almonds and roast seaweed strips on top. Yummy!

The Day Before

Bought heaps of veggies today. Prepared and chopped a whole bunch. I have some mixed salads made up (baby spinach, curly lettuce, tomatoes, continental cucumber, carrots, celery, red capsicum, mushrooms and a handful of pecans), some stir-fry veg ready (red & green capsicum, onion, mushroom, zucchini, celery and carrots), a mix of chopped cauliflower, broccoli and pumpkin, plus i have sliced up some chicken thigh meat. Tomorrow I plan to eat for breakfast some stir fry chicken and vegetables, roast chicken and salad for lunch, and for dinner a salmon steak with steamed vegetables. For an afternoon snack i will bring maybe some leftover stirfry and throw a few pine nuts into the mix.

Also this week I am going to eat pork fillet on the BBQ, prawns, and stir fry beef, as well as chicken curry with coconut milk.

It strikes me as a little ironic that my DOGS, Kimberley and Mitchell, have been eating a paleo-inspired diet for years (raw meat, raw eggs, bok choy, carrots, tinned sardines occasionally and fish oil capsules) and they are so healthy and energetic, even though they both have suffered from hip dysplasia for their whole 11 years of life, plus arthritis!! Hmmmmmmmm......
