Almond meal-crusted pork


I am having severe cravings for a latte and baileys. I am not going to succumb. Not going to. Not going to.

For dinner I dredged some pork in egg whites, then coated in almond meal and panfried in a bit of olive oil. With this we had roast sweet potato (I'm going to limit myself to sweet potato once a week only) and roast butternut pumpkin. I added some fresh Roma tomato wedges and cucumber. Delicious! (and, my boyfriend liked it too, well except for the tomato and cucumber).
