Crushed almond encrusted chicken!


It's Day 23 and I just made some yummy chicken for dinner. I took a few chicken breasts, bashed them with a rolling pin to flatten them out a little, then coated them with coconut flour, dredged them in some whisked egg white and then dragged them through some crushed almond meal (left over from making almond milk). Fried them up in a hot oiled cast iron frypan, mmmmm and added some pureed pumpkin and fresh salad. I forgot to squeeze some fresh lime on top, but it didn't even need it in the end.
